Where Did You Go-Weekend??

Happy Monday! I hope everyone had a great weekend! Mine went much too fast! I spent some time with EG's Daddy, Mommy, and of course, EG. EG will be 2 in March and it seems like every time I see her she talks more and more. As of Saturday, she has stopped calling me "GA" her version of my grandma name which is Grana. I discovered this while we were in Hobby Lobby. She was a few aisles over with her mother and I could hear her calling me Grana! Needless to say, I made a mad dash to get to her. She also amazed me when I got her out of the bath and she picked her dirty clothes up, and put them in the hamper without being told. EG's Daddy and Mommy are doing a great job with her.
I also tried 3 recipes I found on Pinterest. They both turned out great!

Pecan Pie Muffins
Pecan Pie Muffins Recipe
  • 1 cup firmly packed light brown sugar
  • 1 cup chopped pecans
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter, melted
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • Vegetable cooking spray
  • 1/2 cup finely chopped pecans

Preparation

1. Preheat oven to 425°. Combine first 5 ingredients in a large bowl; make a well in center of mixture. Stir together butter and next 2 ingredients; add to brown sugar mixture, and stir just until moistened. Coat 2 (12-cup) miniature muffin pans well with cooking spray. Place 1 tsp. finely chopped pecans in each muffin cup; spoon batter over pecans, filling almost to top. Place muffin pans on an aluminum foil-lined jelly-roll pan.
2. Bake at 425° for 10 to 12 minutes or until a wooden pick inserted in center comes out clean. Cool on a wire rack 2 minutes. Run a knife around edge of each cup to loosen muffins, and remove from pans. Makes 2 dozen.

Chocolate Chip Dip

  • 1 8-ounce package cream cheese, softened

  • 1/2 cup butter, softened

  • 1 cup powdered sugar

  • 2 tablespoons brown sugar

  • 1 1/2 teaspoons vanilla

  • 1 cup chocolate chips

  • Mix ingredients together and serve with graham cracker sticks.

    Chicken Roll Ups

    • 1 pkg cream cheese (8oz)
    • 1 pkg crescent rolls (6 ct)
    • 2 shredded cooked chicken breasts
    • 1.5 C grated chedder cheese
    • 1 C grated Monterey Jack
    • 1/4 t salt
    • 1/4 t pepper
    • Italian bread crumbs
    • 1/4 stick melted butter
    Combine chicken, cheeses, salt and pepper. Spoon onto crescents. Roll them up making sure they are sealed around the chicken mixture. Brush tops with butter and sprinkle with bread crumbs. Bake at 350 for 20-25 minutes. To reheat, just place in a 325 degree oven for 15 minutes. YUMMY!!
